Need a quick lunch?
Tired of the same old sandwich? Or same old salad? Why not try a veggie burger!?! Fry it up in a skillet and then top with your favorite topping (ideas below). It’s especially fun to make at home with kids and create a pick-your-own topping bar!
Lunch doesn’t have to be complicated! Veggie Burgers are a great option to have on hand for those crazy busy days. Even though we do eat meat in this house we love having meatless days to both save on money and help balance our plates!
Grab a box of Boca Essential Veggie Patties. We used their roasted vegetable & red quinoa, cooks in 12 minutes on the stove top (I love things that take 15 minutes or less). While it cooked I started prepping the toppings.
Topping Ideas:
- Homemade Guacamole & Mozzarella Cheese
- Grilled Pineapple
- Cubed Cantaloupe & Pear
- Fresh Squeezed Lemon
Side Ideas:
- Fresh Fruit
- Sweet Potato Fries
- Cubed Oven Potatoes — I make these in bulk the night before and then you can reheat in the skillet next to the patties.
- Stir Fry Veggies
Done! Easy lunch for both you and your kids!
