Looking for an easy meal to throw together last minute? These oven potatoes are quick and easy and make the perfect side to everything from chicken to scrambled eggs. I’m excited to be working with Spectrum® to bring you this great potato recipe.
My personal favorite is paring the potatoes with ground beef and topping it with sliced avocado — seriously divine.
Ingredients
- 3 lbs Red Potatoes – washed and cubed.

- Garlic or Garlic Powder
- Onion Powder
- Salt
- Parsley
- Optional: Shredded Cheese
Directions
1. Preheat over to 350°.
2. Throw the potatoes in a casserole pan, drizzle with Spectrum® Olive Oil.
3. Sprinkle generously with garlic powder (or press 3 cloves of garlic), onion powder and salt. Stir well.
4. Add parsley on top, slip in oven and let cook until potatoes are soft. I love mine a little mushy but some people like them firm so just poke them with a fork to see how soft they are.
5. Optional: Sprinkle with cheese and put back in the oven for an additional 5-10 min.
Serve with chicken or scramble up some eggs and make delicious “breakfast” burritos. Enjoy!

We love oven roasted potatoes! I always put garlic salt on, but I’m going to try your mix next time. Last year we harvested 500 pounds of potatoes from our garden… so hopefully we’ll be able to do this recipe a number of times this year :).

What a great questions but I’ll honestly say I’ve never actually timed it! It will depend a little on what size cubes you cut your potatoes into and how cooked you like them. I would guess 45 minutes. If you time it will you stop back in and let us know! I’ll try to remember to time them next time I make them as well!

OMG, simple is right! I love this, there is just my hubby and I, but I can imagine making a whole pan of these and then suing it in different ways for meals throughout a weekend – with eggs for breakfast, with a protein for dinner, etc. Love it!
