We recently had an unexpected get-together and I had to come up with a cute summer treat – quick!
We already had some of our mango cupcakes baked and ready to go, so with the simple addition of some whipped topping and sugar crystals, I was able to transform them into snow cone cupcakes!

All you need to make snow cone cupcakes are:
- a dozen cupcakes or muffins, whichever flavour you prefer
- whipped topping (check out my recipe for homemade whipped cream)
- sugar crystals in three fun colours
- straws cut in half
- cute cupcake liners or snow cone cups
- two small bowls
- one offset spatula
If you have a bit more time, you could even dye your cupcake batter in two or three colours and make divided cupcakes using these inserts.
How to Decorate Snow Cone Cupcakes
Simply ice your cupcakes using the offset spatula and whipped topping. I like that it was light and not too sweet for a hot summer day.
The kids can even help with this step as you’re not going for perfection — you just need to cover the top of the cupcake evenly.
Pour two colours of your sugar crystals into separate bowls and dip one side of the iced cupcake into each bowl, covering about 1/3 of the icing with each colour of sprinkles, like below.
Carefully pour the third colour overtop of the cupcake, aiming for that middle streak of exposed whipped topping. It doesn’t have to be perfect, and again, the kids can help with this.
Cut some straws down into cute and unobtrusive sizes and insert into the top of the finished cupcakes. If I had planned on making these I would have ordered some cute “cupcake cups” or even some snowcone cups but the kids really didn’t mind, either way!
