For such a small little bottle, Vanilla Extract at the store, has quite a hefty price tag! I don’t know about you but that was enough reason for me to start making my own. With only two ingredients, homemade pure vanilla extract has to be one of the easiest recipes there is.

Literally ALL you will need is a bottle of Vodka and some vanilla beans! Slit the vanilla beans long-ways, which speeds up the process.
We made ours in a mason jar this time. After slitting them, we dropped them in a mason jar and filled it with Vodka. Last time we bought a smaller Vodka bottle, so we just made it directly in the bottle. Put the lid on, give it a good shake, and find a place for it to sit for the next couple of weeks. It’s fun to watch the color change! And when you smell a vanilla scent instead of vodka, you’re good to go!

How many vanilla beans vs vodka ratio?

We used 7 beans for a quart of vodka but the number is pretty flexible. The more beans the sooner it will be ready to use!

Do you leave the beans in or take them out when the vanilla is ready?

I leave mine in until I have a recipe I can make with them — for example I’ll make a coffee creamer recipe that calls for a whole vanilla, so I’ll just use them up as I go.
