Easy Healthy Muffins that even your toddler will love!
Calling all parents of picky eaters!! Anyone else have one in their home? I was definitely one of those parents who swore they would never have a picky eater.. that is, until I had kids! It turns out, food is a pretty big deal, and not all kiddos are a fan of all textures, tastes and dishes served. (And just when you think you have it figured out, they decide they want nothing to do with it tomorrow!) Have you seen the Picky Eater’s Club? If not, it’s priceless! One of my favorites:
We happen to have a toddler in the house. He’s adorable, don’t get me wrong!
Healthy Muffins
What you’ll need:
- 3 1/2 c. rolled oats
- 1 c. sweetener of choice (we like sugar in the raw! If using honey, go with less!)
- 2 tsp (or TBS if you like a little more pizazz) of cinnamon
- 2 tsp baking powder
- 1 tsp salt
- 1 c. milk (any kind will work. We’ve subbed almond, hemp & coconut)
- 1/2 c. melted butter (olive oil or coconut oil work too!)
- 2 eggs
- 2 tsp vanilla extract
- 1/4-1/2 c. fruit or veggies (we love blueberries, zucchini, carrots, or bananas in ours!)
Preheat oven to 350 F.
Combine oats, sugar, baking powder & salt. Add milk, butter, eggs, and vanilla. Mix well. Add fruit. Pour 1/3 way full into muffin liners (or, you can just add it to a greased 8×8 pan!) Bake muffins for 15-20 minutes, or 20-25 minutes for an 8×8 pan!
Feel free to adjust the ingredients a little for altitude or for the fruit you add! Frozen fruit can add a little extra moisture.
Enjoy warm with melted butter (or coconut oil!) on top! And, smile knowing you just got some goodness into your little picky eater!
