Thanksgiving. I love everything about this holiday! Family, Food, Pecan Pie & Leftovers. The only thing I don’t like is the stress. When you have multiple kids around the Thanksgiving dinner table, helping them all with their food can get a little hectic. So why not try these super cute Thanksgiving “cupcakes” to alleviate som stress? You can stack them up on a plate OR… make them in a muffin tin!Â
This is also the BEST way to use up leftovers after Thanksgiving!
Aren’t they pretty? They are also super easy to make and can be adjusted to each kids taste preferences.
When I’m making a bunch, I found them easiest to make in a muffin tin.
I’ve layering them a bunch of different ways but my favorite is this order: turkey, cranberry sauce, stuffing and then mashed potatoes to help hold the stuffing in place. I filled a ziplock full of mashed potatoes and then cut a small hole in the corner to squeeze out of.
You can pop them in the oven at this point to brown the potatoes just a bit if you’d like.
Then finish with your choice of green beens or cranberries to garnish the top.
They are the perfect portion control so the kiddos don’t fill up on only mashed potatoes.
Pair them with some sweet potato fries and you are garunteed to impress everyone at your party!
These stacks are great for making leftovers look pretty the next day {like a whole new meal}!
