Hungry for some Homemade Pico de Gallo? You will love this recipe with it’s “secret” ingredient — lime essential oil!
You want to know a secret? When I go to a good Mexican restaurant, I start drooling over the chips and pico de gallo hours before we go! If I get anything on the menu it would be that. There is just something so fun about sharing a bowl of those perfectly crunchy, salty tortilla chips and freshly-made pico de gallo with friends and family. In fact, I am already wanting to schedule the next girls’ night out to head to our local spot to get their amazing blend of tomatoes, onions, jalepenos, and spices. It just hits the spot!
I can’t always go out though, so I needed a fast solution for nights in at home. I came up with a recipe that is so close to perfection, my husband steals the bowl from me. We just might find ourselves munching on chips and this easy homemade pico de gallo recipe because it is super yummy!
EASY HOMEMADE PICO DE GALLO
3 large ripe tomatoes deseeded & cut into chunks
1 jalepeño seeded to prefered spiciness & diced
2 drops lime essential oil*
1 garlic clove minced
1 sweet onion diced
S & P to taste
Chop, mince and dice all veggies. Add all ingredients to a food processor. Pulse just a couple times. It comes together quickly! Keep a close eye on it so it’s as thick or as smooth as you prefer. Enjoy with some delicious tortilla chips, on your favorite taco, or by the spoonful. (I won’t tell!) I had never tried adding lime essential oil* in before because I love using fresh limes, but I ran out of the fresh kind! This was surprisingly tasty though and worked in a pinch!
