Looking for an easy meal to feed your family quick? Let me introduce you to super easy potato soup! If you love soup this is the recipe for you. This creamy, delicious soup paired with King’s Hawaiian Original Hawaiian Sweet Rolls is perfect for the colder, holiday season!
Super Easy Potato Soup
Ingredients
- Cubed Potatoes
- Cream
- Cheddar Cheese
- Garlic & Onion Powder
- Salt
- Turkey Bacon & More Cheddar Cheese to Top
- King’s Hawaiian Dinner Rolls
Directions
1. Wash and cube the potatoes — about 3lbs.
Peeling your potatoes is optional, we use red or gold potatoes and wash them well since we prefer the taste of peels left on.
2. Throw the potatoes in a large pot, fill with water only till the potatoes are just barely covered. Put on med-high heat and boil until potatoes are soft.
3. Once the potatoes are soft, carefully dump out half the water. Keeping half the water in with the potatoes (this starchy water mixed with cream makes the best soup).
4. Sprinkle generously with garlic powder, onion powder and salt. Mix.
5. Add cream till potatoes are just barely covered once again — we added about 2-3 cups. Mix.
6. Throw in 1-2 handfuls of grated cheddar cheese.
7. Let simmer on low until cheese melts, everything is mixed and it looks starchy and thick!
8. Cook up some turkey bacon to crumble on top of the soup. Sprinkle soup with turkey bacon and cheese, grab some rolls (King’s Hawaiian dinner rolls are our favorite) and enjoy!
Any extra soup can be stored in the fridge, it’s absolutely delicious the next day as well!
