Breakfast is the most important meal of the day! Remember your mom telling you that? Or maybe it’s something you find yourself reminding your own kids. But what do you eat for breakfast? Confession – my go-to choice is normally a cup of coffee as I’m running out the door to work. I get so busy making sure everyone else eats, and I skip over myself! Without that early morning energy boost, I get extra hungry later in the day, and often end up eating too much or making bad food choices because of that gnawing feeling in my stomach.
So starting this week, I’m going to work on eating breakfast every morning. To help out with that, here are some awesome breakfast ideas that are both quick to make, and easy to eat “on-the-go”. Quick Breakfast Ideas:
1. Breakfast Burrito – this is an amazing breakfast because of the great balance of carbs, fat, and protein. It gives you the energy to get through your morning, and by putting your eggs in a burrito, it is SO easy to take with you in the car or pack in a cooler for later.
2. Homemade Fruit, Granola, & Yogurt Parfait – I try to pre-make a couple of these at the beginning of my week! Mason jars work great – layer your favorite yogurt (use Greek yogurt for a burst of protein!) with homemade granola, and top with fruit.
It can be hard to find decent fresh fruits this time of year, and I’ve discovered a new favorite – Sunsweet Philippine Tropicals dried fruit! They have some amazing flavors – Sunsweet Philippine Pineapple is juicy and delicious, which is perfect for a parfait! It seriously tastes like fresh chunks of pineapple. So good.
3. Banana Bread Muffins – Make these at the beginning of your week, and have them on hand for a quick boost as you run out the door! I add nuts to mine for some additional protein.
4. Dried Fruit – So much better than those gummy fruit snacks, I’ve recently discovered how delicious dried fruit is! I love just eating it plain, but it’s also great for adding to many of your favorite healthy recipes – I put it in granola, trail mix, snack bars, parfaits. . . and Sunsweet Tropicals are a great taste of summer this time of year.
The Sunsweet Philippine Mango is my favorite one. After visiting the Philippines for a study-abroad trip in college, I have never been satisfied by “American” mangos. But these dried ones are honestly the next best thing! They are a great way to satisfy my sweet tooth without totally blowing my goals to eat healthy!
Sunsweet has recently come out with a new flavor, Philippine Green Mango. These are tangy, just like you’d expect from a fruit that is picked before it’s totally ripe, but they are also surprisingly sweet! And the Thai Coconut Chip is an amazing addition to granola, or to just munch on alone. I like the crunch they have, unlike the coconut flakes you normally can get.
