OMG, simple is right! I love this, there is just my hubby and I, but I can imagine making a whole pan of these and then suing it in different ways for meals throughout a weekend – with eggs for breakfast, with a protein for dinner, etc. Love it!

In reply to Larissa. What a great questions but I'll honestly say I've never actually timed it! It will depend a little on what size cubes you cut your potatoes into and how cooked you like them. I would guess 45 minutes. If you time it will you stop back in and let us know! I'll try to remember to time them next time I make them as well!

We love oven roasted potatoes! I always put garlic salt on, but I’m going to try your mix next time. Last year we harvested 500 pounds of potatoes from our garden… so hopefully we’ll be able to do this recipe a number of times this year :).
